This beautiful coffee comes to us from Andrés Martínez, a young and talented producer from Cauca, Colombia. Andrés is a biochemical engineer who never strayed far from his family’s coffee-growing roots. On his two farms, he cultivates standout varieties like Geisha, Chiroso, Papayo, Bourbon Rosado, Caturra, and Sidra — each chosen with care and curiosity.
For this lot, Caturra Floral, Andrés starts with a hand-harvested selection of ripe cherries. They’re fermented in sealed tanks for 48 hours with beer yeast, then depulped without water and fermented again for 24 hours in tanks with water. This thoughtful process draws out a layered sweetness and fruit character while keeping the clarity and balance of a washed coffee.
We roast this coffee light to bring its bright, sweet, and fruit-forward profile to life. In the cup, look for notes of lavender, jasmine, mandarin, caramel, and a gentle honey sweetness that lingers long after the last sip.
